Spaghetti squash seeds — the squash with noodle-like strands

Spaghetti squash is the novelty everyone grows once and then keeps growing: bake it and the flesh pulls apart into golden, noodle-like strands. It's a winter type within our gourds & squash range and part of our wider vegetable seeds. First time growing squash? Our vegetable growing guide covers the basics.

A naturally light, low-carb stand-in for pasta — and the oblong fruits store for weeks once ripe.

Why grow spaghetti squash

It's a genuine talking point on the plate and a kitchen workhorse — mild, slightly sweet strands that take any sauce. The plants grow much like other winter squash, are productive and trouble-free, and store well alongside your pumpkins for autumn meals.

Growing spaghetti squash from seed

Treat it as any winter squash: sow indoors in late spring, plant out after frost into rich, sunny soil, and give the trailing vines space. Water and feed while the fruits fill, then ripen them fully before harvest. The sowing calendar shows the windows, and the germination guide helps the seeds get going.

Leave fruits on the vine until the skin is hard and pale gold for the best strands and longest storage.

Why is it called spaghetti squash?
When cooked, the flesh separates into long, thin, noodle-like strands that look and serve like spaghetti — hence the name. How do I cook spaghetti squash?
Halve it, scoop the seeds, then roast or microwave until tender and rake the flesh into strands with a fork. Serve with any pasta sauce. When is spaghetti squash ready to harvest?
Leave fruits until the skin turns hard and pale gold, usually well into autumn. Cut before the first frost, leaving a length of stalk. How long does spaghetti squash keep?
Cured and stored somewhere cool and dry, the firm oblong fruits keep for several weeks to a couple of months.
